Description
This isn't a random Fishing Knife bundle. Each Victorinox knife is designed for a specific part of the filleting process, which is why it's so much more effective than using one cheap knife for everything.
20cm Flexible Fillet Knife: This is your main filleting tool. The long, thin blade has a lot of flex, which allows it to bend and follow the rib cage and backbone of a fish. This is how you get a clean fillet with minimal meat left behind.
18cm Semi-Flexible Fillet Knife: A great all-rounder. It has a bit more stiffness, which gives you more control. It's very useful for starting the initial cut behind the fish's head or for skinning the fillet once it's off the bone.
15cm Curved Boning Knife: This is the detailer. The shorter, curved blade is for getting in and around the pin bones or trimming bloodlines and other bits you don't want. Its main job is control for precise cuts.
Honing Steel (Sharpener): This is the key to keeping the knives working. It's a "steel" for *maintaining* the edge (honing), not for sharpening a blunt knife. A few licks on this before each session keeps the blade perfect.
